Is this crazy or what? I actually have another recipe to share that I made last night (and actually have made several times) that: a. uses very few ingredients, b. has 5 minutes of prep time, and c. gets eaten ALL up!
*Quick-Fix Cheeseburger Meatloaf (yep, from kraftfoods.com again!)
- 1 lb ground beef
- 10 saltine crackers, crushed (about 1/2 cup)
- 2 Tbsp dijon mustard
- 1/4 cup ketchup
- 3/4 cup shredded cheddar cheese
Preheat oven to 375 degrees. Mix meat, cracker crumbs, and mustard until well blended. Pat meat mixture into 8-inch loaf pan. Bake 40 minutes or until cooked through. Spread meat loaf with ketchup; sprinkle with cheese. Bake 5 more minutes or until cheese is melted.
*Please note this recipe makes 4 servings
(I served this with green bean casserole and garlic/sour cream mashed potatoes)
