I came across this recipe yesterday at the Pioneer Woman's "Tasty Kitchen" recipe site and fixed it for dinner last night. It was simple to throw together and it tasted good too! And it was especially good warmed up today for lunch ;)
Soft Taco Casserole (think of it as a Mexican Lasagna)
- 2 pounds Lean Ground Beef Or Ground Turkey
- 2 packages Dry Taco Seasoning Mix
- 2 cans Beans, Your Choice; Drained & Rinsed
- 1 can Rotel (whichever Kind Floats Your Boat)
- 1 can Whole Kernel Corn, Drained
- 1 bag Shredded Cheese, Your Choice (2 Cup Size)
- 1 package Flour Tortillas
- Brown ground meat and drain any fat;
- Add 2 packets taco seasoning mix, plus water called for according to the package directions; Blend well;
- Add beans, corn, & Rotel; Blend well;
- Bring mixture to a boil, then reduce heat to simmer for 10 minutes; remove from heat;
- Stir in half of the shredded cheese, until cheese is melted and completely blended;
Assembly:
- Spray 9×13 pan with pan spray;
- place flour tortillas to cover bottom of pan;
- spread about 1/3 of the meat mixture over the tortillas;
- place another layer of tortillas, then spread another 1/3 of the meat mixture;
- place a third layer of tortillas, and then spread the remaining meat mixture over that;
- sprinkle with the remaining shredded cheese;
- bake in 325 degree oven for 25-30 minutes, until hot & cheese is melted and bubbling;
- let rest for 10 minutes before cutting;
Serve with lettuce, salsa, sour cream, jalapeno or banana peppers, or whatever extras you enjoy with tacos.
